Vermicelli upma/ shavige uppit


How to make vermicelli upma ?

  • Roast vermicelli with a spoon of oil in the pan till they start becoming light brown and keep it aside.
  • Get oggarane ready from the template
  • To the oggarane add 1 and half times water of that of vermicelli. Say if you added 2 cups of vermicelli, then add 3 cups of water.
  • Add salt to taste
  • Add any chopped vegetables like carrot/peas (optional )
  • When it looks like the vegetables are almost cooked in the boiling water, add the vermicelli and coriander leaves stir well and let it cook till all the water is evaporated from the vermicelli.
  • You are done !

Template for oggarane


Oggarane is a must part of almost all dishes. Instead of repeating all over, am just writing template for that. This is kind of customized to my taste..with lot of onions etc.

You need :

1 big chopped onion
1 small sized garlic chopped
curry leaves
coriander leaves
2-3 mirchis
1 spoon mustard seeds
1/2 spoon kadle bele
1/2 spoon urad dal
2-3 spoon oil

How:

Heat oil in the kadai, after a while add mustard seeds. Wait till they pop up, next add kadle bele, urad dal, mirchi, garlic, curry leaves and fry for a minute. Next add onion and fry till they are lightly brownish. finally add coriander leaves.

Template for saaru




So a template that can be used for almost all ಸಾರು ....

From this template, the different varieties of ಸಾರು that can be done are (Just keep changing the vegetables)

  1. Beans ಸಾರು
  2. chayote - ಸೀಮೆಬದನೆಕಾಯಿ ಸಾರು
  3. ಹೀರೆಕಾಯಿ ಸಾರು
  4. ಸೋರೆಕಾಯಿ ಸಾರು
  5. ಪಡವಲಕಾಯಿ ಸಾರು
  6. ಸೊಪ್ಪು ಸಾರು ( ಮಸ್ಸೊಪ್ಪು ಮಾಡುವುದು ಬೇರೆ ರೀತಿ.. ಇದು ಸುಮ್ಮನೆ ಬೇಳೆ ಮತ್ತು ಸೊಪ್ಪು ಸಾರು )
  7. ತೊಂಡೆಕಾಯಿ ಸಾರು
  8. ನುಗ್ಗೆಕಾಯಿ ಸಾರು

ಹೀಗೆ ಮಾಡುವುದು ...

  • Get vegetables and bele cooked
Measurement of bele is something like this..ondu hidi bele in your hand can be counted as required bele for 1 person for 1 time. so for 2 ppl to eat twice, put 4 hidi of bele. wash bele and vegetables with water. add 1 chopped tomato too. put bele first in the bowl and then vegetables, tomato at the top. add water just such that vegetables are just immersed in water. You can put soppu instead of vegetables. Now boil in cooker, 3 whistles.

  • Get ingreidients ready for oggarane
  1. chop 1 or 2 onions
  2. karibevu ಸೊಪ್ಪು
  3. kottambari ಸೊಪ್ಪು
  4. ೧/೨ garlic
  5. even get tamarind paste ready
  6. 1-2 ಮೆಣಸಿಕಾಯಿ
  7. ಸಾಸಿವೆ
  8. ಹಳದಿ
stove ಮೇಲೆ ಪಾತ್ರೆ ಇಟ್ಟು, add 2-3 spoon of oil. once oil is heated, add mustard. then add garlic, karibevu, mirchi in order and fry for a min. then add chopped onion and fry till onion is golden brown.

  • Mixing and final phase
Now add cooked bele and vegetables/ಸೊಪ್ಪು to this oggarane. add ಹಳದಿ , tamarind ಪೇಸ್ಟ್ (ಒಂದು ಚಮಚ ), curry leaves, ಉಪ್ಪು (ರುಚಿಗೆ ತಕ್ಕಂತೆ ), kharada pudi/sambhar ಪುಡಿ (ಅರ್ಧ - ಮುಕ್ಕಾಲು ಚಮಚ ). keep stirring ..ಚೆನ್ನಾಗಿ ಕುದಿಸಿದ ಮೇಲೆ switch off stove and you are done... :)
